Ingredients:

  • 1 pound fresh clams, scrubbed and rinsed

  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato paste
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh basil

Instructions:

  1. In a large pot, bring the clams to a boil. Reduce heat to low and simmer for 10 minutes, or until the clams are tender and the water has been absorbed.
  2. Remove the clams from the pot and transfer them to a bowl of ice water to cool.
  3. While the clams are cooling, heat the vegetable oil in a large skillet over medium heat.
  4. Add the onion, garlic, parsley, basil, oregano, thyme, salt, and black pepper to the skillet and cook until softened, about 5 minutes.
  5. Add the diced tomatoes and tomato paste to the skillet and cook until the tomatoes are softened, about 5 minutes.
  6. Add the clams to the skillet and cook until heated through, about 5 minutes.
  7. Serve immediately with crusty bread.

Tips:

  • For a richer sauce, use a combination of different types of clams, such as razor clams, littlenecks, and mussels.
  • You can also add other vegetables to the sauce, such as carrots, celery, or bell peppers.
  • If you don't have fresh herbs, you can substitute with dried herbs.
  • Serve with crusty bread, such as sourdough or rye.
