Ingredients:

  • 2 lbs (907 g) of ground corn
  • 8 cups (20 L) of water
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 tsp (5 ml) of black peppercorns
  • 1 tsp (5 ml) of salt
  • 1 tsp (5 ml) of dried oregano
  • 1 tsp (5 ml) of dried thyme
  • 1 tsp (5 ml) of dried basil
  • 1 tsp (5 ml) of dried parsley

Instructions:

  1. In a large pot, combine the ground corn, water, onion, carrots, celery, garlic, black peppercorns, salt, oregano, thyme, and basil.
  2. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the corn is tender and all the liquid has been absorbed.
  3. Season to taste with additional salt or black pepper, if desired.
  4. Serve hot with a side of crusty bread.

Tips:

  • For a richer soup, use all of the vegetables available.
  • You can also add other vegetables, such as potatoes or green beans.
  • If you don't have fresh herbs, you can use dried herbs.
  • Serve with a dollop of sour cream or Greek yogurt for a creamy and tangy finish.
